It is a kind of natural color extracted from natural monascus. Its main components are monascorubin, rubropunctatin and so on. Dark purple red powder with slight smell and easily soluble in neutral and subalkaline water solvent. Solubility will decrease under substances with PH4.0. It is very easily soluble in ethanol, propanediol, propanetriol and their water solvents and insoluble in oils and fats and non-polar solvents. Used in making alcohol, confections, cooked meat products, reserved bean curd, icy creams, frozen suckers, biscuits, puffed foods, jellies and spiced cans.
